Chef Inesa Dirginciute’s approach to cooking is shaped by a lifelong fascination with ingredients, seasonality and the simple pleasure of bringing people together through food. Inspired by childhood days spent cooking alongside her brother, she has built a career founded on craftsmanship, curiosity and a deep respect for quality produce.
Her professional journey has taken her through some of the UK’s most respected kitchens, where she refined her technique and developed a thoughtful, ingredient-led style of cooking. A formative chapter came at the Michelin-starred Angler in London’s South Place Hotel, where working under Gary Foulkes helped shape her appreciation for flavour, restraint and the importance of allowing exceptional ingredients to speak for themselves.
Today, Inesa’s cooking balances the precision of her fine dining background with a more relaxed and generous approach. Drawing on Scotland’s outstanding seasonal produce, she creates dishes that feel familiar yet refined, celebrating comfort, provenance and a strong sense of place.
